Tuesday’s Cupful: Sushi Rice

Less is more..more or less

Not surprisingly, there are actually several different renditions for sushi rice aka sushi meshi.  What goes into our blend?  We recommend adding a mere splash of rice wine vinegar or rice vinegar to 2 - 3 cups freshly cooked rice.  Rice wine vinegar possesses a naturally sweet taste to it.  Some recipes require adding sugar but the Mixed Stew crew prefers to go sugarless for health reasons.  However, you can add a teaspoon or two of regular sugar if you want a stronger flavor in the results.  DO NOT ADD ANY COOKING OIL TO RICE WHEN MAKING SUSHI!  Yes, we’ve discovered some recipes that call for it.  The rice is supposed to be sticky.  Mix sushi rice in large bowl with spatula after seasoning then it’s ready for making sushi rolls.
