Tuesday’s Cupful: Soupa Verde Frio

Alternative to gazpacho
This cool veggie loaded soup aka soupa verde frio that’s served chilled has the qualities and flavors that make a tasty substitute to gazpacho. This site, on Portuguese food, refers to it as “A gazpacho style soup!”The deep green color (compared to vibrant red) provides an appealing feast for the eyes. Like traditional red gazpacho, the trick in preparation requires a food processor or blender to create a smooth, yet thick consistency that’s all veggie. Recipes vary with some calling for yogurt, zucchini, or even celery.
