Tuesday's Cupful: Background on Tapenade


A spread that’s not cheesy

This tasty spread originated in Provence, France.  The name “tapenade” comes from the Provencal word tapèno, which stands for capers.  Meanwhile, the caper plant is known as tapeneï in the region.  Most chefs and food lovers know that tapenade is considered a specialty food delicacy.  Different recipe variations exist that always call for three base ingredients: olives, capers, and olive oil.  Remember that all three of those ingredients have been staples in the Mediterranean region for centuries.  Other less popular tapenade recipes might list: mustard, wine, or vinegar.   Also, look for tapenade being used as a filling or stuffing inside cooked fish fillets.
