Wednesday’s Helping: Alternative Tapenade Ingredients


If you don’t have a craving for the usual

Traditional tapenade has its fans but we have suggestions if you don’t like the flavors of capers.  Substitute capers with pieces of broiled artichokes or grilled eggplants.  Also, some people really can’t stand the strong flavors of anchovy fillets.  What’s a yummy alternative?  We suggest adding sliced - dried seaweed or nori – traditional Japanese sushi wrap – instead of anchovies.  Just make sure to puree all the ingredients so that the vegetarian tapenade looks like the traditional version.
