Thursday’s Side Dish: Canned Anchovies

Look for canned anchovies in the Italian foods specialties aisle in your favorite supermarket.  Cooks like to add these salty fish to Caeser salads, sauces, and even pasta dishes.  A little goes a long way with this ingredient that usually comes packed in salt or oil so use sparingly.  Each small specimen must be gutted before being packaged in the usual tins.  Consumers in some regions do identify sardines and anchovies as the same fish.  Also, remember that canned anchovies are popular as a pizza topping.
