Wednesday’s Helping: Options for Chilaquiles

Give it a twist


If you don’t have steak on hand, we suggest making this dish with grilled chicken breast or even grilled Mexican chorizo.   You can also prepare chilaquiles using loose but well-browned ground beef.  Wanna makes it with seafood?  Grill shrimp on skewers and substitute instead of meat.  Or else go completely vegetarian with grilled poblano peppers or portabello mushrooms.  Meanwhile, we also found chilaquiles recipes that call for scrambled eggs in addition to meat so that’s doable, too.
