The
list of veggies and other yummy ingredients you can use in Japchae is
endless. We suggest adding diced tofu or bits of dried tofu to make each
serving more robust without violating vegetarian dietary restrictions.
Also, imitation crab meat or chopped fishcake can substitute for shrimp or
messier seafood ingredients. We also suggest sprinkling in dried red
pepper flakes along with the sesame seeds for a hot flavor kick. If you’re
really in a pinch, chopped luncheon meat, like SPAM, can also provide any Japchae
with more savory oomph.
